I have NEVER had any luck getting them to eat pellets when they have seed in another dish! you will want to mix the pellets with the seed about 60/40 seed to pellets. and if your planning on only giving pellets in the future, slowly decrease the seeds.
for a well balanced diet, you would want to offer both

Converting seeds to pellets takes time and patience.
Budgies do not like to try new foods until they are 100% sure that it is harmless and this can take a while.
During the day, do you have a seperate bowl for pellets and seeds? If there are readily seeds available, they will not even think about the pellets.
A good way to go at it is to leave the seeds in with a couple of pellets in the morning and night. During the day, take out the seeds and replace with pellets. Since your budgies eat their "full" meals in the morning and night, this will ensure you that they are not starving. But during the day, they also like to pick at their food and their only choice are the pellets.
Keep doing this and increase the amount of pellets you give in the morning and night. Don't worry! They may even take months to finally give it a try. :)
Some also like to mash their pellets into a pudding and add seeds in there. This will make sure that they are indeed, tasting the pellets and may begin to like it. :)
Some budgies like sweeter foods so maybe some mashed up pellets (a rolling pin and sandwich bag will be handy here), along with some seeds and a tiny bit of fruit juice or 100% fruit/veg baby food could tempt your budgie. It's worked for me (i discovered this idea on the pellet bag, lol), then eventually leave it dry and even stop mashing the pellets. I definitely think that seeds are an important part of a budgies diet and shouldn't be replaced by pellets, but i also think pellets are great as an addition to the diet.

The only way I can get Willie to even LOOK at pellets is if I crunch them up into little pieces. Try that. :)
